Do you know what STINKY TOFU is? If you have been to Hong Kong and Taiwan night markets, you will know what this is. I have been craving for these tofu. My neighbour bought me some from the SS2 shop, I have tried and found them not smelly enough and just more herbal. I think they are more Taiwanese style. So I told them, let me try to make my own Hong Kong style stinky type. So I went on doing some research on how we can make the fermentation. Guess what, I must say I am super happy and excited over the stinkiness in my house. Weird but true. I felt like I was in a Hong Kong night market! I gave myself a 7/10 mark. Hahaha.
HK Style Fermentation Ingredients (2.5 litres jar):
. 1 whole mustard green/spinach, cut
. 4 to 5 stocks of coriander/spring onions, cut
. 200 g or more old ginger, sliced
. 20 to 25 pcs or more fresh prawns for prawn heads
. 5 pieces of fermented bean curds, mashed. 1 cup rice wine
. 1 litre rice water (water from washing rice)
. 1 litre cooled down cooked water
. 1/2 cup of salt
* Mix all above into an air-tight glass jar & leave it in your storage for 2 weeks to 1 month. It can get very smelly!!
For Fried Stinky Tofu Ingredients :
. 20 pcs of small to medium size firm tofu (not the soft tofu)
. oil for frying
* Soak the tofu in fermented water overnight in a sealed container overnight in the refrigerator.
To serve (dig a whole in the middle of the tofu & add below ingredients) :
. Spicy sauce or
. Pickled cabbage or kimchi
. Cut coriander or spring onions
My only advice for you all is fry your tofu outside the house or with your hood on full blast! Otherwise you will end up having the night market store smell for 1.5 days like I had. I don't hate it, but everyone in the house was hiding inside their rooms!
I am glad I found the secret of making this. Hope I will improve this and make them even more smelly and yummier? Yes I will soak the tofu for more than a day. So what is next? I still have a huge jar of Taiwanese fermentation going on. I will be able to try it in 2 weeks. I am determined to let it ferment for a month. Will let u all know soon.
Yes they are stinky when u prepare them and fry them up. But they taste far better than they smell. It has many health benefits like helping the digestive system and treating cold symptoms. According to some studies, eating stinky tofu can also help prevent osteoporosis, lower the risk of prostate and breast cancer, and reduce cholesterol. Hmm, interesting. I love them no matter what!

Haiyaa.. Not copying anyone to do fried rice but showing you how my Poh Poh used to show us how to enjoy fried rice, especially for someone who doesn't like rice like me.
I am surely bringing back a lot of childhood memories through my cooking and dressing up videos. Life is cool when we remember the best moments in life.
Ingredients:
. Rice - Multi-grain rice : Black rice, purple rice, wild rice, Quinoa, millet, buckwheat, black-eye peas, mung beans, Sorghum, sesame seeds.. You can also add oat, pearl barley and soy beans. I didnt add these 3 grains as Mika is allergic to Soya and Gluten.
. Diced smoked duck (I got mine from Seafood Maestro +60 11-2302 9399. They are very GOOD!)
. Chopped garlic
. Cut onions
. Minced Ginger
. Cut spring onions
. Shredded carrot (I didn't have stock)
. Cut long beans
. 3 to 4 eggs
. Oyster sauce
. Soy sauce
. Salt
. White pepper
. Oil
. Lettuce leaf for wrapping
If you have a fire stove, your fried rice will be fantastilicious!! Chinese like the WOK HEY- Wok Fire.. Add in fried salted fish and chili padi and more ginger.. Oh My.. I feel so hungry again.
Fried rice is probably the most humble and casual comfort food. It is something you cook when you have too much leftover rice from your meal yesterday or you just don't know what to cook and you have very little ingredients left in your refrigerator. My Poh Poh used to say : 炒冷饭Chǎolěngfàn means fried cold rice. Leftover rice is usually refrigerated overnight, so you take it out and fry it while it is still cold. LOL. But whatever it is, fried rice is definitely one of the best Chinese all-in-one dishes that conquered the world. It is quick, affordable and you dont need to be a professional chef to cook this.

Comment how else you'd cook your fried rice! 👇🏼 Here are our favourite fried rice tips:
1️⃣ ALWAYS use overnight rice! (less moisture = more grain-like texture)
2️⃣ Add salt and cornstarch to cooked rice BEFORE frying (reduces leftover moisture)
3️⃣ Mix beaten egg into cooked rice BEFORE frying, add in rice on high heat to separate the grains
Bonus!
👉 Dice all ingredients into almost equal sized grains (so that everything cooks evenly and quickly)
👉 Premix sauces into a small bowl before adding them in (you want to make sure that you have everything prepped so that your rice doesn't burn)

夏野菜と鶏むね肉の南蛮漬け
2人分
材料:
鶏むね肉 1枚
塩 少々
コショウ 少々
米粉 大さじ2
玉ねぎ 1/4個
なす 2本
ズッキーニ 1/3本
パプリカ赤/黄 1/4個ずつ
オクラ 3本
ピーマン 2個
Aめんつゆ(2倍濃縮)1/4カップ
A水 1/2カップ
A酢 1/2カップ
A砂糖 大さじ3
Aしょうゆ 大さじ1
A輪切り唐辛子 少々
揚げ油 適量
作り方:
1.なすはヘタを取って乱切り、オクラはヘタを取り斜め半分に切り、パプリカ細切り、ピーマンは一口大に切る。
2.玉ねぎは薄くスライスし、ズッキーニは輪切りにして、Aを混ぜ合わせたボウルに一緒に入れる。
3.鶏むね肉は水気を拭き取り、そぎ切りにして塩、コショウ、米粉をまぶす。
4.揚げ油を170℃に熱し、(1)を素揚げし、(しっかり水気を拭くことでハネを防ぎます)揚げ終わったら(3)を揚げる。
5.(4)を熱いうちに(2)に漬け込み、冷蔵庫で冷やし、お好みで一晩漬けたら完成!

Nanban Pickles of Summer Vegetables and Chicken
Servings: 2
INGREDIENTS
1 chicken breast
Some salt and pepper
2 tablespoon rice flour
1/4 onion
2 eggplants
1/3 zucchini
3 okra
2 green pepper
1/4 red and yellow bell pepper
A
1/4 cup noodle soup base (2 times concentrated)
1/2 cup water
1/2 cup vineger
3 tablespoon sugar
1 tablespoon soy sauce
Some chopped chili peppers
Some oil for frying
PREPARATION
1. Remove the stem off eggplants and okra. Cut eggplants into small pieces. Cut okura into halves. Slice red and yellow bell peppers. Cut green pepper into bite-sized pieces.
2. Mix all ingredients in a bowl. Slice onion thinly and cut zucchini. Marinate them in the bowl.
3. Pat dry the chicken with a paper towel and cut into small pieces. Season with salt and pepper and coat with rice flour.
4. Heat oil to 170°C (338°F). Deep-fry all vegetables (1) first, then the chicken (3). *Make sure to pat dry all vegetables.
5. Put all fried vegetables and the chicken in the bowl (2) while hot. Leave it in the refrigerator overnight.
6. Enjoy!

2-3 tbsp oil
1/2 bowl chicken thigh or prawn
2 eggs
1.5 bowl overnight rice
1/2 tbsp garlic or onion or shallots
1/2 tbsp curry powder
1/4 tbsp tumeric powder (optional)
1/2 tbsp sugar
1/2 tbsp soy sauce
1/2 tbsp fish sauce
A pinch of white pepper
1/3 bowl pineapple
(Can either use fresh or canned)
1/4 raisins
1/4 cashewnuts
(Roast cashewnuts in the oven at 100 c for 2 hrs)
1 tbsp spring onion
